how to make: Wonderstruck Raspberry & Vanilla Cream Tubes

As a follow up to our recipe for Wonderstruck Fairy Cakes, a delightful afternoon treat that we served in London at our Wonderstruck Press event to celebrate the launch of Wonderstruck in the UK on August 1st, 2012, we are sharing another recipe from the event with you -this time, for Wonderstruck Raspberry & Vanilla Tubes!

We just love this recipe because it features 2 of the 13 fragrance notes found in Wonderstruck: vanilla and raspberry

Raspberry and Vanilla cream tubes:

  •  200g of double cream
  • 50g of raspberry puree
  • 50g of caster sugar
  • 10g of glucose
  • 3 g of Ultratex (molecular ingredient)
  • Vanilla seeds
  1. Blend all the ingredients together until smooth
  2. Pipe mix into tubes, and roll ends with a knife
  3. Keep refrigerated
